This is a great recipe, really simple and a definite family favourite. We like to eat it on its own with a cuppa or toasted under the grill then slathered in peanut butter or Nutella! Give it a go toasted if you haven’t tried it already, it’s incredible!
This recipe makes a small loaf or an 8” round cake.
Ingredients
- 115g Margarine (room temp)
- 230g Sugar
- 1 tsp salt
- 1 tsp baking powder
- 1/8 tsp bicarbonate of soda
- 1 tsp vanilla extract
- 275g mashed bananas (3 average-sized bananas)
- 2 eggs
- 4 tbsps of milk with a squeeze of lemon juice (this makes buttermilk)
- 310g Self Raising Flour
Method
- Add 4 tbsps of milk and a squeeze of lemon juice to a cup and microwave for 30 seconds. Then set aside.
- Grease your loaf tin or cake tin and preheat your oven to 170c/ Gas Mark 3.
- Add your margarine, sugar, vanilla extract, salt, baking powder and bicarbonate of soda to a large mixing bowl and whisk until fluffy and fully combined.
- Mash your bananas and pour those into your mixing bowl with the eggs, milk and flour and whisk until fully combined.
- Pour your cake mixture into your loaf tin or your cake tin. Depending on which type of tin you use, the cooking times will vary.
- If using a loaf tin, bake your cake for 1 hour to 1hour 20 minutes or until golden and your knife comes out clean. You may find you need to lower the temperature slightly if it’s getting too brown.
If you’re baking in an 8” tin, you should find this will require less time as the mix will fill less of the tin. You will need to bake for approximately 1 hour or until golden and your knife comes out clean. - Once your cake is baked, leave to cool on a cooling rack.
