Oaty Banana Cookies

We always have ripe bananas and I hate to throw them away, especially when you can make something really delicious with them!  The go-to recipe for ripe bananas seems to be banana bread (I have a recipe for that too) but this time I wanted to try something different.

So I thought I’d have a go at making cookies, this recipe gives you 18 big fluffy cookies… full of flavour and very easy to make.

Ingredients

  • 150g butter (room temp)
  • 100g white sugar
  • 100g light brown sugar (if you don’t have brown sugar, white will be fine)
  • 300g oats
  • 250g plain flour
  • 1 large egg
  • 1tsp salt
  • 1tsp vanilla extract
  • 0.5tsp bicarbonate of soda
  • 3 ripe medium bananas (Mashed)

Optional

  • 100g pecans (roughly chopped)
  • 1.5tsp ground cinnamon
  • 1 tbsp of peanut butter (to drizzle on the top of the cookies once they’re baked)

Instead of pecans, you could use raisins, chocolate chips, dry roasted peanuts, leftover Easter chocolates… You can be creative with what you throw in there, just as long as it’s dry and NOT fresh or frozen fruit.

Method

  • Preheat your oven to 180c/ Gas Mark 4. Line 3 large baking trays with greaseproof paper.
  • Add the butter, sugar, salt, vanilla extract and egg to a large bowl and mix until fully combined.
  • Next add the flour, bicarbonate of soda, oats and mashed bananas. Then mix until you have a thick paste-like cookie dough.
  • I sprinkled the cinnamon and roughly chopped pecans into the dough at this stage, ensuring it was all mixed well.  You don’t have to add cinnamon or pecans,  you can add whatever you like, raisins or chocolate would work really well with this recipe.
  • Using a dessert spoon, scoop a heaped spoonful of the mixture and dollop it onto the lined baking tray.  Don’t be tempted to flatten or spread your cookie dough, they spread slightly whilst in the oven.  Space them evenly on the baking tray, I managed to fit 6 per baking tray. You should get approximately 18 cookies in total.
  • Bake the cookies at 180c/ Gas Mark 4, for 12-15 minutes or until golden brown.
  • Once baked, remove them from the oven and allow them to cool.
  • Once cooled, warm up a tablespoon of peanut butter and then using a small spoon, drizzle the peanut butter over the top of the cookies! I’m a huge fan of peanut butter and I absolutely love it with anything Banana.  It works so well! If you’re not a fan, you could drizzle with melted chocolate or with some icing.
