Everyone loves a scone, whether it be plain, fruit, cheese or something a bit more fancy. I don’t think I’ve ever come across a person that doesn’t like a scone… Do you know anyone???
The recipe I’m giving you is for a basic plain scone recipe, but I will also give you some more information to fancy them up! You will get approximately 8-10 scones from this, depending on the size of your cutter. I recommend using a 6cm cutter.
Ingredients
- 350g self raising flour, plus extra for dusting.
- 3 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 85g unsalted butter , room temperature, cut into blocks
- 175ml milk with a squeeze of lemon juice, pop this mixture into the microwave for 30 seconds. This will warm the milk and cause it to curdle. This makes a cheats version of buttermilk 😉
- 1 tsp vanilla extract
- Beaten egg or milk, to glaze
- As this is a plain recipe, you can be as imaginative as you like… you could add 100g chocolate chips, or the zest of a lemon, the zest of an orange, 1 tbsp culinary lavender, 1tbsp of finely chopped rosemary with some sea salt flakes sprinkled on the top of the glazed scone👌🏻…the list is endless.
Method
- Heat oven to 190c / gas 5.
- Prepare your baking sheet with parchment or grease-proof paper.
- Put your milk, lemon juice and vanilla extract into a jug and pop it in the microwave for 30 seconds. Then set aside.
- Mix self-raising flour into a large bowl with the sugar, salt and baking powder.
- Add the butter blocks and rub the dry flour mix and butter between your thumbs and fingers, until there are no more lumps of butter and you have a fine crumb mixture.
- Add your milk to the crumb mix and bring it all together, it will seem sticky at first, but keep kneading the dough until it all comes together. This would also be when you add any additional ingredients to flavour your scones i.e chocolate chips or orange zest.
- Dust your work surface with flour and tip the dough onto your surface.
- Knead the dough until it’s smooth and pliable.
- Dust your rolling pin, dough and work surface again, then begin to roll out your dough until it’s about 4-5cm in thickness.
- Use a 4cm cutter or a glass if don’t have a cutter, begin cutting out your scones, placing each one evenly spaced on your baking sheet.
- Once you’ve used up all your dough, you then need to glaze your scones with beaten egg or milk. To do that, use a pastry brush and paint the top of each scone. You could also sprinkle some sugar on top or maybe some sea salt flakes depending on your flavour choice.
- Put your scones into your preheated oven and bake for approx 15 minutes or until golden brown.
Once they’re all baked, leave them to cool or have them warm with clotted cream and jam 😋
If you don’t eat them all (they wouldn’t last 5 minutes in our house!) once they’re cooled, you can pop them into an airtight container and freeze them for up to 3 months.
